There are several reasons we prepare onion recipes and eat onions in general and the main one is because we really like onions. Onions are one of the most popular vegetables and there is no surprise in the fact that they have many healthy properties. In the past people even believed that onions had amazing curative powers. Maybe they were right but in the meantime enjoy our delicious onions dishes.

Onions with Madeira Wine (Cebolas com Vinho da Madeira)

Ingredients

4 red onions, 1/4 cup of beef soup stock, 1/4 cup of Madeira wine, Salt and freshly ground pepper to taste.

Preparation

Place the onions in a frying pan that is lined with nonstick coating. Add the stock and Madeira wine. Simmer gently, uncovered, until the liquid is almost gone. Taste for salt and pepper. You should need little. Serve as a side vegetable dish with any red meat course. Serves 4 to 6.

Onions with Cream and Madeira wine.
(Cebolas em Creme com Vinho da Madeira)

Ingredients

4 large thickly sliced mild onions, 1/2 cup of Madeira wine, 8 table spoons of butter, salt to taste, freshly ground black pepper to taste, 1/4 cup of heavy cream, 1/4 cup of finely chopped fresh parsley.

Preparation

Melt butter in a wide, heavy pan. Add the onion slices and turn them in the butter to coat them thoroughly. Cover the pan and cook over on a very low heat for 10 minutes, shaking the pan occasionally. Uncover the pan, increase the heat slightly and stir in the Madeira wine. Cook, stirring frequently, until the Madeira wine evaporates and the onions are soft and lightly caramelized. Season to taste with salt and pepper. Stir in the cream and parsley. Bring to a boil, then reduce the heat and simmer for one minute. Serve hot! Onion recipes are marvelous with steak, liver or any grilled meat.
