Pork Chops Stuffed with Chestnuts

This tasty stuffing can be used in many ways. Why not double the quantity of the stuffing mixture and stuff large field mushrooms and grill as an accompaniment.

Pork Chops Stuffed with Chestnuts

Serves: 6

Ingredients:
4 Pork Loin Chops
For the stuffing:
2 oz red onion, finely chopped
2 cloves of garlic, crushed
4 oz cooked chestnuts, finely chopped
½ tsp dried oregano
2 oz feta cheese, crumbled
2 slices of bacon, finely chopped
1 tsp olive oil

Pork Chops Stuffed with Chestnuts

Method:
Mix up the stuffing ingredients in a bowl and set aside. Place the pork pieces on a board or surface and place a layer of cling film over the top. With either a meat tenderiser or end of a rolling pin, tenderise the meat to make it thinner. Carefully cut a slit width ways in each pork chop to create a cavity for the stuffing. Fill the cavity of each pork chop with the stuffing mixture. Place under a hot grill for 8 min on each side. Check that the pork is thoroughly cooked before serving.
