Portuguese Chicken Piri Piri (Galinha de Piri Piri)

Prepare a Portuguese chickens recipe


150 ml (1/4 pint) of olive oil, 2 table spoons of lemon juice, 2 table spoons of crushed chillies, 1 table spoon of garlic salt, 1/2 tea spoon of lemon pepper, 1/2 tea spoon of tarragon, 1/2 tea spoon of basil, 1/4 tea spoon of oregano, 8 skinned chicken drumsticks.


Place the marinade ingredients in a bowl and mix together. Score the flesh of the chicken and pour over the marinade. Refrigerate for two hours or overnight. Cook the chicken on the grill for 25 to 30 minutes, turning occasionally and basting with remaining marinade until thoroughly cooked.

For the lemon juice needed for the chicken piri piri, you may want a fast and convenient Lemon Squeezer  at hand, to get the juice in seconds. Alternatively and for the same purpose, you can try a Glass Citrus Juicer  which squeezes lemons or oranges in a very efficient way.

Portuguese Chicken and Chourico (Galinha com Chourico)


4 peeled potatoes cut into quarters, 4 peeled carrots cut into large pieces, 3 ribs celery cut into large pieces, 1 large onion cut into large chunks, 1 cup of dry white wine, 2 tea spoons of sugar, 1 tea spoon of salt, 1 table spoon of olive oil, 2 cups of chicken stock, 3/4 pound (340g) of chourico (Portuguese sausage), cut into 1 and 1/2 inch (3.8cm) slices, 4 pieces of poached cooked chicken sliced into 1 inch (2.54cm) strips, 1 cup of tomato sauce, 1/4 cup of chopped parsley, Crusty Portuguese bread or other farm bread.


Place potatoes, carrots, celery and onion in a pot. Pour in wine, add sugar, salt, and oil. Add 2 cups of chicken stock. Cover pot and bring to a boil. Reduce heat and simmer 15 minutes. While vegetables cook, brown chourico in a small non stick skillet over medium high heat. If your chicken was frozen, defrost in microwave. Remove the cover from the vegetables and add chourico to the vegetables. Stir in tomato sauce. Set cooked chicken into the pot and heat through, 5 minutes. Adjust seasoning. Ladle chicken into shallow bowls and garnish with parsley. Serve with crusty bread for dipping.
