Quinoa – the ultimate vegan superfood

Okay, I know I said these superfoods were in no particular order, but if they were, I might put this one as #1. This little grain, (technically a seed) is definitely my favorite of the superfoods.

Quinoa, [keen-wa] is a seed from a tall plant native to peru, as well as countries across South America. Since it is not really a grain and is gluten-free, many people sensitive to other grains like flour, corn, oats, and rye, have no problems digesting quinoa.

Quinoa contains all the bodies basic requirements: carbohydrates, fats, protein, vitamins, minerals, and fiber! In a half cup there is over 50 mg of calcium! Perhaps even more amazingly in that same half cup there is whoping 11 grams of protein!

What’s more is the protein in quinoa contains all of the bodies essential ammino acids in an almost perfect balance, making quinoa a complete protein!.  Essential ammino acids are the ones our bodies do not create on their own.  No wonder the Incan people called this the “mother grain” nearly 700 years ago.
