Roast Pork Loin with Apple Topping


1 pork loin roast (4 to 5 pounds)
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dry mustard
1/2 teaspoon sugar
4 tart apples
1/2 cup brown sugar
1/2 teaspoon dry mustard

In small bowl, combine flour, salt, pepper, 1 teaspoon dry mustard, and 1/2 teaspoon sugar; rub over roast; cover and let stand for 30 minutes. Place roast on greased baking rack in roasting pan, fat side up. Roast uncovered in preheated 325 degree oven for one hour.

Prepare apples:  Pare and dice apples; place in saucepan and add 1 tablespoon water. Cover and simmer for 10-15 minutes, stirring frequently, until apples are soft. With masher or wooden spoon, press apples until smooth.

Combine 1 cup of apple mixture, brown sugar, and 1/2 teaspoon dry mustard. Spread over roast. Continue roasting; total roasting time is 30-35 minutes per pound. Let rest for 15 minutes before carving.

Roast Pork Loin with Apple Topping

Serve with remaining apple mixture.

Serves 8 to 10.

NOTE:  You can substitute store bought applesauce for the apple mixture.
