Roast Pork Tenderloin with Rosemary

 INGREDIENTS:

2 pork tenderloins (approximately 10-14 ounces each)
1 tablespoon dried rosemary
2 garlic cloves, crushed
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup fresh lemon juice
1/4 cup water

Preheat oven to 425 degrees.

Combine rosemary, garlic, salt, and pepper; rub mixture over tenderloins. Pour lemon juice and water in roasting pan; add pork.

Bake uncovered until pork is cooked through, 30 to 40 minutes. Allow to stand for 10 minutes before carving.

Serves 6 to 8.

Roast Pork Tenderloin with Rosemary

NOTE: Since pork tenderloin is so lean, roasting at a higher temperature for less time will keep it from drying out.

IMPORTANT: Be sure your oven is preheated to 425 degrees before putting the tenderloins in the oven. This also helps keep it from drying out.
