Russian Cuisine – Lobio Soup Recipe

Lobio Soup includes red beans which makes this a hearty soup. The addition of walnuts makes this recipe a classic Georgian dish.

1 tin of kidney beans, rinsed
1 medium onion, finely chopped
2 pt vegetable stock
250g walnuts, shelled
Salt and Pepper to taste
6 sticks of celery, finely chopped
1 tsp fresh dill, chopped
1 tsp fresh parsley, chopped
2 tsp fresh coriander, chopped
1 tsp fresh mint, chopped

Pour the stock and beans in to a large pan and bring to the boil. Cook over a low heat for 1 hour.
Whilst the beans are cooking whiz up the walnuts in a blender, with a little of the stock from the soup, to form a paste. Add this along with the celery and onion to the pan and simmer for 10 min. Then add the herbs and stir in. Cook for a further 10 min season with salt and pepper before serving.
