Here’s a low hassle approach to a red snapper bake from Russia.

Serves: 4

2 lbs red snapper, filleted
2 tbsp flour
3 tbsp vegetable oil
Salt and Pepper
3 large potatoes, peeled and sliced
2 large onions, peeled and sliced
¼ lb canned crab meat
2oz butter, (melted plus a little for greasing the oven dish)

Season the flour with salt and pepper and coat the fish fillets in the flour. Heat a pan with the oil, and once hot add the floured fish. Cook for 3 min before turning. Cook for a further 3 min (or until the fish is golden). Remove the fish from the frying pan and drain on paper towel. Reserve the oil. Next add the onions to the pan and cook on a medium heat for 8 – 10 min so that they are starting to soften. Remove with a slotted spoon and continue to do the same with the potatoes, frying them for 8 – 10 min. In a butter dish place a layer of the fish, followed by a layer of the onions. Scatter with the crab and then a layer of the potatoes. Pour the melted butter over the top and cook in a preheated oven at 200C for 20 min, or until the top has turned golden.
