Slow Cooker Pork Pot Roast

1 clove garlic, cut in half
salt and pepper
2 tablespoons canola or vegetable oil
1 pork loin roast, end cut (3-4 pounds)
1 large onion, chopped
1 green pepper, chopped
2 celery stalks, chopped

Rub pork roast with garlic halves and season with salt and pepper. Heat oil in skillet; add pork loin and brown on all sides.

Place chopped onion, green pepper, and celery in bottom of slow cooker. Add browned pork. Cover and cook on low until done (about 8-10 hours).

Serves 6-8.

NOTE: It’s not necessary to add water when placing fresh vegetables in the bottom of the slow cooker as they give off a lot of juices.
