South African Cuisine – Beef Birds with Mustard Recipe

Beef and mustard are considered a classic combination. Here is another recipe suggestion of how to combine these two ingredients so that they compliment each other well.

Serves: 4

8 thin slices of beef topside, weighing about 800g, prepared for cooking
45ml spicy brown mustard
salt and pepper
4 large pickled cucumbers, halves lengthways, or 8 medium-size
30ml vegetable oil
2 onions, thinly sliced
300ml beef stock
1 bay leaf

Preheat the oven to 180C. Place the slices of beef on a work surface and brush them with the mustard almost to the edges, then season them with salt and pepper. Place a piece of cucumber along one edge of the slice and roll up neatly. Tie the rolls with string or secure with a wooden cocktail stick. Heat the oil in large non stick pan, and fry the beef rolls over a moderate heat until they are browned all over. (You may need to do this in batches). Once browned remove from the pan and set aside. Add the onions to the pan, and fry until they are soft and start to brown. Once the onions are browned return the beef rolls to the pan and add the beef stock and bay leaf. Bring to a boil over a high heat. Cover the pan and place the pan in the preheated oven. Cook for 1 hour until the beef is tender (turning the beef rolls half way through cooking). Once cooked remove the string or cocktail sticks from the beef and serve with potatoes and rice.
