South African Cuisine – Shrimp Chowder Recipe

Use well-drained frozen prawns or shrimps if you wish; canned shrimps are a cheaper option.

Serves: 4

2 Large Onions
2 Cloves Garlic
2 Large Potatoes
2 Tbsp Butter
3 Tbsp Cake flour
1 L Hot water
2 Chicken Stock Cubes
1 Fresh or dried bouquet garni (thyme, bay leaf, parsley)
500 ml Milk
200 g Peeled Shrimps
Freshly Milled Black Pepper
1/4 tsp Salt
2 Tbsp Parsley, chopped

Peel and finely chop onions and garlic. Peel potatoes and cut into 1.5 cm cubes. Melt butter in a large saucepan and fry onion and garlic until translucent. Stir in flour. Add potatoes, water, crumbled stock cubes and bouquet garni, cover. Bring to boil and simmer for about 10 minutes until potatoes are soft. Add milk and shrimps and bring to the boil. Season with salt and pepper. Garnish with chopped parsley.
