Your Comments: Though this recipe was simple the flavours where wonderful, my friend used it at a BBQ all the guests couldn’t get enough!

90ml olive oil
75ml orange juice
60ml lime juice
1 large garlic clove, finely chopped
5ml allspice berries, crushed
1.5ml hot chilli flakes
salt and pepper
900g raw tiger prawns, peeled, deveined and butterflied
lime wedges, to serve

South African Cuisine   Spicy Butterfly Prawns Recipe

Combine the oil, fruit juice, allspice, chilli flakes and seasoning in a shallow baking dish. Add the prawns and carefully combine all the ingredients so that the prawns are coated in the spiced oil. Cover the dish and leave to marinade for 1 hour at room temperature or at least 2 hours in the refrigerator. Preheat the grill and spread the prawns in one layer in your shallow baking dish, arrange them cut side up as much as possible. Grill about 10 cm away from the heat for about 6 – 8 minutes or until the flesh becomes opaque. There is no need to turn them.

Serve with lime wedges.
