This is a great scrummy cake recipe!

2 cups sifted cake flour
1 teaspoon baking powder
1 teaspoon soda
1/2 cup melted butter
1 cup sugar
apricot jam
3/4 cup whipping cream
3 tablespoon confectioner’s sugar
20 single crackers
1 cup buttermilk

In a large bowl sift together flour, sugar, baking powder and soda. Crush the crackers very finely and add to the dry ingredients. Beat the eggs slightly and slowly stir in buttermilk. Gradually add to the dry ingredients, mixing well.
Next blend in the butter. Line two: 8-inch round layer cake pans with waxed paper and turn batter into pans. Bake in moderate oven (150-180`c) for 45-50 minutes. Once cooked let it stand for 10 minutes before removing from pans.
Cool thoroughly before spreading the apricot jam between layers. Beat together the whipped cream, confectioners sugar and vanilla and spread on top of layers. Decorate with apricot halves if desired.
