Spanish Cuisine – Calamari Recipe

Calamari is a popular tapas dish from Spain. I like to serve it with a garlic mayonnaise.

Difficulty Rating: Easy

Serves: 4 as part of a tapas

1 lb prepared squid, cut into rings
100g plain flour
60 ml sparkling water
Vegetable oil for deep frying
Slices of Lemon as a garnish

Mix together the flour and sparkling water to make a batter. Heat the oil in a large pan or wok. You can test that the oil is hot enough by placing a little piece of bread into it. When it turns golden the oil is ready.
In batches, dip the squid in the batter and then straight into the oil (careful not to splatter). Cook in the hot oil for about 4 min turning once. The squid is ready when golden. Repeat this until all the squid is cooked. When you remove the calamari from the pan, drain on kitchen paper.
Serve hot with wedges of lemon.
