Spanish Cuisine – Tortilla Recipe

This is a classic Spanish version of an omelette. The use of potatoes make it extremely filling

Serves: 6

1lb potatoes, peeled and cut into small chunks
60ml olive oil
2 cloves of garlic, crushed
1 tsp turmeric
2 tbsp water
6 eggs, lightly beaten
salt and pepper
1 onion, roughly chopped

Heat the oil in a frying pan, add the onions, potatoes, garlic and turmeric and fry on a low heat for 15 min until the ingredients are soft. Add the eggs, salt and pepper and cook for a further 8 min on a gentle heat. The bottom of the omelette should now be firm. Place under a hot grill for 5 min or until the top is golden and firm. Serve with a fresh green salad and thinly sliced tomatoes.
