Spanish Cuisine – Vegetarian Empanadas Recipe

Empadillas are little pastry parcels and can be stuffed with meat, cheese or vegetables. I like to serve these as a tapas.

Serves: 4

200g ready prepared puff pastry
100g feta cheese
100g black olives
50g sun-dried tomatoes
2 tbsp fresh basil
1 egg, beaten

Roll out the pastry to a thickness of 3mm. Cut 8 circles of approximately 13cm. Mix the remaining ingredients together in a bowl. Preheat the oven to 200C. Place a tbsp of the cheese and olive mixture onto each pastry circle and secure in the shape of a half moon. Repeat with all the circles! Place the little pasties on a baking tray. Brush with a little egg and place in the oven for 10 – 12 min or until golden. Serve immediately.
