Swiss Cuisine – Chicken with Swiss Cheese Recipe

4 chicken breasts with skin on
4 oz Gruyere cheese, grated
2 oz button mushrooms, finely sliced
2 tbsp olive oil
1 small onion, finely sliced
1 clove of garlic, crushed
1 oz butter
1 oz flour
½ pt milk
6 sage leaves, chopped finely

Preheat your oven to 180C. Heat the oil in a pan, once hot place the chicken skin side down in the pan. Once the skin has browned turn over. Remove from the pan once the underside has coloured. Remove the chicken from the pan with a slotted spoon and place in an ovenproof dish. Place the onion and garlic in the pan with the remaining oil and cook over a low heat for about 5 – 8 min until the onions have softened. Meanwhile in a separate pan over a low heat, melt the butter, then add the flour and stir furiously until you have a paste. Slowly add the milk and simmer for 3 – 5 min or until the sauce has thickened. Next add the mushrooms and sage leaves and stir in. Pour the sauce over the chicken and cook for 25 min or until the chicken is cooked. Remove from the oven, turn the heat up to 200C and scatter over the gruyere cheese. Return to the oven for a further 5 min or until the cheese starts to bubble.

Serve with a crisp green salad.
