Crock-pot Green Beans (Feijao Verde em Tacho de Barro)

Ingredients

250g (about 1/2 pound) of green beans, 1 onion, 3 or more garlic cloves, 2 bay leaves, 2 linguicas, salt and pepper to taste, 2 cracked eggs.

Preparation

Save fat from cooking linguica and use about 1 table spoon of the linguica fat and place it in a small frying pan. Chop onions and garlic and sweat them in linguica fat. Do not brown them. When onions and garlic smell really good place them in your crock pot with warm water enough to cover the green beans. Turn on crock pot to high for 15 minutes or until green beans are soften. Crack eggs on top and cook for another 3 minutes with the lid on and it’s ready to serve. Serves 2

Green Beans Soup (Sopa de Feijao Verde)

Ingredients

1 Ib (450g) of fresh green beans, 1 and 1/2 quarts (1.5L) of water, 2 tea spoon of salt, 1/2 tea spoon of pepper, 3 large potatos cut in chunks, 2 medium tomatos cut in chunks, 2 large Onions cut in chunks.

Preparation

In a 3 quart (2.8L) saucepan bring to a boil 1 and 1/2 quarts (1.5L) of water. Add 2 tea spoons of salt, 1/2 tea spoon of pepper, 3 large potatoes cut in chunks, 2 large tomatos cut in chunks and 2 large onions cut in chunks. Simmer for 30 minutes or until vegetables are tender. Puree through a sieve or food mill and the pureee should be thin. Add 1 Ib (450g) of fresh green beans cut across in thin slices. Simmer for about 10 minutes until beans are tender. Correct the seasoning. Serves 8 in bowls.
