Thai Cuisine – Hot and Sour Soup Recipe

This clear broth is a traditional Thai recipe, that is served by street vendors across Thailand

Serves: 4

1 tbsp ground nut oil
8 oz firm tofu
3 oz shitake mushrooms, finely sliced
4 oz watercress or baby spinach leaves
For the stock:
1 tbsp tamarind paste
2 pt of water
2 dried chillis
3 kaffir lime leaves, finely shredded
1 stalk of lemon grass, outer leaves removed and sliced
1 “ piece of ginger, peeled and sliced
2 shallots, roughly chopped

Thai Cuisine   Hot and Sour Soup Recipe

Place the stock ingredients in a pan and bring up to the boil. Turn down the heat and allow to simmer for 10 min. Remove from the heat and pass the stock through a sieve to leave you with a clear broth. Reserve the stock. Heat the oil in a wok and when hot add the tofu. Stir fry for 4 – 5 min or until the tofu starts to colour. Add the stock and mushrooms and boil for 3 – 4 min. Then add the watercress, remove from the heat and serve.
