Coronation chicken is a dish generally served as a sandwich filling or with salads in the UK. It was first created by florist Constance Spry and Chef Rosemary Hume for the coronation of Queen Elizabeth II in 1953. This version of the recipe uses for low fat mayonnaise, which is what, makes the recipe low fat. Feel free to use regular mayonnaise if you so choose though!

Serves: 4

2 cooked chicken breasts
4 tbsp low fat mayonnaise
2 oz raisins
2 oz seedless grapes
2 tsp curry powder
1 tsp lemon juice
Pinch of cayenne pepper

Shred the chicken, and reserve. Add together the mayonnaise, curry powder and lemon juice in a bowl until you get a pale yellow mixture. Add the chicken, raisins and grapes and stir through, sprinkle with a pinch of cayenne pepper and serve.
