UK Cuisine – Slow Roast Pork Belly Recipe

Turn the cheapest of pork cuts into the tastiest roast ever. Slow roasting removes all the fat and provides crisp crackling.

Serves: 6

3lb piece of belly pork. (One piece)
2 large Spanish onions
1lb carrots, sliced
1lb parsnips, sliced
1 tbsp virgin olive oil
Sea salt

Pre heat oven to 130 C. Remove skin from belly pork and put to one side. Halve onions crosswise. Place the onions cut side own in large casserole dish. Slice carrot and parsnips and place round onions. Lay the pork belly on top of vegetables covering them all. Score the pork skin all over with a sharp knife and rub in olive oil. Rub sea salt into skin and place on top of belly pork. Put casserole dish in oven and slow cook for 3 hours. Remove cooked pork and cut into thick slices. Break up crackling. Serve with your favorite roasted vegetables.
