Carrot Cake almost sounds healthy and probably is compared to many cakes you can make. The carrots help to create a really moist cake.

Serves: 6 – 8

6 oz grated carrots
6 oz butter
6 oz soft brown sugar
3 large eggs
6 oz self raising flour, sifted
2 oz ground almonds
3 oz walnuts
For the topping
6 oz cream cheese
1 oz walnuts

Start off by greasing a loaf tin and preheating the oven to 180C. Cream together the sugar and butter until light and fluffy, and then slowly add in the eggs. If the mixture starts to curdle add a little of the flour. Sieve in the flour and add the ground almonds. Fold this together using a spoon. Add the grated carrot and walnuts and mix in thoroughly. Pour the mixture into the prepared tin and cook on the middle shelf for 1 hour or until firm to the touch. When it is cooked allow to cool thoroughly before adding the topping. Beat the cream cheese so that it is a more pliable texture and spread the cheese over the top. Then decorate with the walnuts.
