This is a filling and cost effective dish which makes for great mid week family eating. To make it go a bit further why not add a poached or fried egg to each serving?

1lb potatoes, peeled and cut into cubes
1 tin of Corned Beef, cut into similar size cubes
2 tbsp vegetable oil
1 onion chopped
1 tsp Worcestershire sauce

Heat the oil in a pan over a medium heat and sauté for 5 – 6 min to allow the onions to soften. Mean while, place the potatoes in a pan of boiling water and par boil for 5 min. Drain the potatoes and add them to the onions and continue to cook for a further 8 – 10 min so that the potatoes crisp up. Then add the corned beef and Worcestershire sauce. Carefully mix in and cook for a further 4 -5 min to heat the corned beef up and allow it to start to get crispy. Serve immediately.
