UK Cuisine – Pear, Rocket and Pine Nut Salad Recipe

This is a great light dinner party starter – it’s tasty and easy to prepare.

Serves: 4

1 Comice pear, peeled and cut into thin slices
200g rocket
20g pine nuts
20g parmesan, peeled into shavings
2 pieces of brown bread, crusts removed and cut into small cubes
1 clove of garlic, crushed
1 tbsp olive oil For the dressing:
Juice of a lemon
2 tbsp extra virgin olive oil
½ tsp freshly cracked black pepper
1 clove of garlic, crushed

First off make the dressing. Place all dressing ingredients in a bowl and whisk up. Place the pine nuts in a frying pan over a medium heat and allow them to toast, turning frequently (don’t leave them unattended as they turn quickly). Place the bread, oil and garlic in a bowl and coat the bread thoroughly. Place the bread on a baking sheet and put in the oven at 200C for about 10 min until the bread has toasted. Set aside. To assemble the dish, coat the rocket in the dressing and assemble on the plate. Place slices of pear on each plate, and scatter over the pine nuts, croutons and parmesan. Serve immediately.
