Vietnamese Cuisine – Lemongrass Chicken Recipe

Lemon Grass has a wonderful fragrant flavour and suits the fresh clean tastes associated with Vietnamese Food.

4 chicken breasts, cut into cubes
4 stalks of lemon grass
1 “piece of ginger, peeled and grated
5 kaffir lime leaves
250g mange tout
1 large onion, sliced finely
rind of 1 lemon
1 tsp ground cumin
1 tbsp vegetable oil
1 red chilli, sliced finely

Place the chicken, lemon grass, kaffir lime leaves and ginger in a bowl. Cover and place in the fridge for 2 hours. Heat the oil in a wok, add the onion and stir fry for 2 – 3 min or until they start to colour. Add the chicken and marinade ingredients to the wok and stir fry for a further 5 min to colour the meat. Add the, cumin, chilli and lemon juice and cook for a further 8 min or until the chicken is nearly cooked through. Add the mange tout and cook for a further 2 min until they are warmed through but still crisp.

Serve with steamed rice.
