Vietnamese Cuisine – Pho Bo Recipe

Pho Bo can best be described as the national dish of Vietnam. The key to this recipe is to have a good quality broth (stock) as this is the back drop for the dish.

Ingredients:
2 oz dried thin noodles
1 pt good beef stock
6 oz of lean beef cut into very thin strips
4 spring onions
1 “ piece of fresh ginger, peeled and grated
2 tbsp hoi sin sauce
1 tsp dark soy sauce
pinch of Chinese five spice
2 oz bean spouts
1 red chilli, very finely chopped
2 oz fresh coriander
1 tsp fish sauce

Method:
Start by soaking the noodles in boiling water for 8 -10 min until they are soft. Place the stock, hoisin, soy sauce, Chinese five spice, chilli, ginger and half the spring onions a pan and heat through for about 10 min. Arrange the noodles between the 2 bowls. Divide up the remaining spring onions, the bean sprouts and the beef. Pour over the stock. (As the beef is sliced so thin it will cook the beef. Pour the fish sauce over and scatter each bowl with coriander leaves. Serve immediately.
