What Is The Difference Between Sushi and Sashimi?

Many people don’t know this, but sashimi is not considered a form of sushi. People do tend to think this because sashimi can be found served in sushi restaurants.

While both do seem similar the different is that sushi uses vinegar rice and sashimi do not.

Sashimi is a big part of Japanese cuisine, and is often the first course served, but can also be served as the main course presented with rice and miso soup in separate bowl. Many Japanese people believe that sashimi is one of the finest dish and should be eaten first, before any other course.

While sushi which mean (vinegar rice) in Japanese it uses rice, but sashimi is consist of fresh raw seafood slice in thin pieces usually about 2.5cm wide and 4.0cm long, but the cut sometimes differ depending on the chef and the seafood use.

Sashimi are usually serve only with a side of soy sauce, wasabi paste, thin slice ginger, and sometimes ponzu sauce depending on the customers taste.

Many sashimi lovers believe that the practice of mixing wasabi in soy sauce dilute the sharp flavor of wasabi. The reason for serving wasabi with sashimi, beside the flavor is that it is known to kill harmful bacteria and parasites that could still be present in raw seafood. Since sashimi is consist of only raw food there’s always a risk when eating, because of food borne illness caused by bacteria and parasites.

What Is The Difference Between Sushi and Sashimi?

It is regulated that freezing the fish first, which is a common practice that is done to kill these bacteria freezing fish at -20°C (-4°F) for 24 hours kills parasites.

The FDA recommends freezing at -35°C (-31°F) for 15 hours, or at -20°C (-4°F) for 7 days to be on the safe side.
